Wow. That is crazy to say. So busy writing and posting about all other things and haven’t even had a chance to share my wedding updates with you. Coming up this Sunday July 31st – I will be a married women. Other than letting you know that I am having a vegetarian wedding there is so much more for me to share!
Okay where to start!!

Get Ready for a Delicious Year!

Wow 2011. I am rather excited for this year as it is going to be filled with some great experiences. A few personal ones like my 30th birthday on November 11th, 2011 – not that it is so exciting to be getting older, but it is rather special having my elevens lined up all on one day! Also, on July 31st, I am getting married to Ryan. We have an incredible weekend event planned in Niagara on the Lake – I couldn’t be more excited for that! Two big special life moments all in one year!
Aside from all of that, my Delicious business is going to be beaming this year with many classes, events and retreats. I am really taking things to the next level and offering my community multiple opporutnties to get Fully Nourished.
If you haven’t checked out MY CALENDAR so far, please do so – as spots are filling up fast for my all my upcoming classes. I have all kinds of class themes with various group packages to choose from. There is something for everyone !

Who doesn’t love Jam Dot Cookies?

A couple of weeks ago I took on the Canada am Cookie Challenge. I thought that for whatever it was worth, I would submit one of my favourite cookie recipes to see if it would win and Canada would realize just how delicious this cookie really is. My cookie wasn’t the winner, but made it as one of the finalists, ( I didn’t even want the prize: $500 to the Bay), I wanted people to taste a cookie that was made without butter, sugar, flour and cornstarch. If you didn’t know it already – cookies can be made WITHOUT these ingredients – and still taste amazing.
I selected this recipe in particular because as a little girl, nothing made me happier than creamy, white Jam Cookies. When I decided to give those up as I transitioned into healthy eating, I still longed for something that tasted similar. I came across a recipe that used all of the above “traditional” ingredients and began by converting them over one by one and landed with this recipe!
Which to me, is not only super simple, but it is also super delicious. I have tested it out on many a family member and have had nothing but a great response. So I thought the team at Canada AM would think the same?
Maybe next year my Jam Dot Cookies – filled with coconut oil and maple syrup will get the recognition and glory that they deserve. These ingredients may be new some some people, but they are responsible for making every one of my baked goods turn out perfectly and taste incredible. Others eventually will learn this – and it will become public delicious knowledge. Until then, enjoy the recipe below!
Jam Dot Cookies
1 cup almonds, ground to fine meal
1 cup spelt flour
1 cup rolled oats, ground to a fine meal or oat flour
¼ teaspoon ground cinnamon
½ cup melted pure coconut oil
½ cup maple syrup
Pinch of sea salt
Strawberry or raspberry jam (fruit sweetened or no sugar added)
Procedure:
Preheat oven to 350, line 2 baking sheets with Parchment paper.
- In medium bowl, combine almonds, flour, oats and cinnamon. Mix well to combine.
- In separate bowl, blend oil, maple syrup, and sea salt. Add to nut mixture and stir to combine.
- Roll into walnut sized balls. Place on baking sheet and press down with thumb.
- Fill indentation with jam and bake for 15-20 minutes.

Balanced Holiday Eating – Special Holiday Post!

Are you hosting the Holidays at your home this year? Having everyone over in the comfort of your home will ensure that you know exactly what is on the menu! This way you can plan a diverse menu that is hearty, healthy and delicious! Tell people what to bring, prepare the meal together or make it all yourself! Whatever works for you, make it happen and enjoy the perfect balanced holiday meal!
1. Variety –You want to make sure you have a little bit of everything so you are not left craving anything after the meal or feel like something is missing from you plate. A whole plate full of mashed potatoes, a piece of bread and turkey is not very appetizing, colourful or creative!
2. Texture – It’s always nice to experience a different sensation in your mouth with each bite – strive for a dish that is Crunchy (steamed green veggies), Chewy (cooked grains), Soft (mashed sweet potatoes) and Crispy (baked apple crisp). Those are just some ideas!
3. Colour – Choose lots of vibrant fresh colours from squash, yams, parsnips, carrots, and beets – with that alone you can create an amazing roasted root vegetable dish or a creamy soup. Always include some dark leafy greens like kale, broccoli, or spinach. Have fun with splashes of yellow from peppers or whole grains like quinoa and millet. The more colourful your plate is, the more exciting it will be to eat!
4. Shape – Every food has its own unique shape. You can choose the natural shapes you like from different foods or you can get creative by cutting your sweet potatoes and carrots a particular way. Alternatively, choose brussel sprouts, cauliflower or green beans for some variety. This makes each bite unique.
5. Flavour – It is important to balance all six of the major flavours in each meal. This means making sure you choose recipes that include Salty from sea salt, sea vegetables and tamari; Sweet from fruits, root vegetables and maple syrup; Pungent from cinnamon, ginger, cayenne cumin and garlic; Sour from lemon, lime and oranges; Astringent from legumes, fruits and vegetables and Bitter from dark leafy greens, herbs and spices.
By incorporating the suggestions above into your holiday meal, you’re sure to achieve the perfect balance and leave your palette, as well as your guests’, satisfied!
Squash-Carrot Soup
Makes 4-6 servings
Ingredients:
1 medium onion, chopped
1 tbsp olive oil
4 cups vegetable stock or filtered water
2 cups carrots chopped
1-2 cups butternut or kabocha squash, peeled and diced
2 medium apples, cored and diced
1/2 tsp sea salt
1/2 tsp cinnamon
1 tsp nutmeg
(2 tbsp fresh ginger root)
*** For added nutrition and a balanced meal, serve with some brown rice and steamed green vegetables such as swiss chard, kale, or broccoli and top with pumpkin seeds or parsley for added texture and colour!
- In a large soup pot, sauté the onions in oil on medium heat until they become translucent.
- Add the stock, carrots, potatoes, apples and salt, pepper, nutmeg and ginger. Bring to a boil.
- Turn down heat and simmer for 30 minutes. Take 2 ladles’ worth of vegetables and 1 ladle of stock and blend in a blender or food processor until smooth or you can puree the entire pot. Return to soup pot and stir together before serving.

Sweet Little Mini’s

I remember the days when we would drive all the way down to Buffalo to grab a box of hostess mini muffins at Wegmans. It was the concept of mini that was so enticing and the fact that you could only get them in the USA. They also tasted pretty good and you could pop at least five of them and not feel guilty, because they were small right? Well of course the processed ingredients in these boxed muffins didn’t matter at that point in my life. But now they do, and many moons later, I still love muffins and especially mini ones. I have my own mini muffins tray – so I can now put dollops of delicious, wholesome and healthy batter in and make batches of goodness whenever I feel the urge. Actually, these past couple of weeks seem to be all about muffins and snacks. I can stop making them! Maybe because it just that time of year that we want a little more sweetness and more things to munch on. Or maybe I am just making up excuses. Because the truth is they are so much fun to make! Muffins are especially interesting as I always like to come up with new combination’s! One of my favourite muffins back in the day, and still to this day are apple cinnamon. There is something about just a bit size muffin that is so much fun – and they honestly taste better. That’s because so much stuff is packed into such a small space. Especially these ones, which are bursting with apples, cinnamon and currents in every bite. The other best part about mini’s, other than them being super cute, you can pack them up and take them with you on the go! They also make a great snack! They also taste especially delicious with almond or sunflower seed butter.

MINI APPLE CINNAMON MUFFINS
What’s in it?
1 cup spelt, kamut or oat flour
½ cup oats
1 tsp baking powder
½ tsp baking soda
¼ tsp cinnamon
¼ tsp sea salt
¼ cup oil (coconut or grapeseed)
¼ cup maple syrup
1/3 cup apple sauce
1 apple, seeded and cut into small cubes (you can even leave the skin on!)
½ cup rice milk
½ raisins or currents
****Trade in the apples for bananas and raisins or currents for chocolate chips or blueberries and make a different variety!
How it’s made!
Preheat oven to 350F
- Measure and combine dry ingredients, flour, oats, baking powder, baking soda cinnamon and sea salt
- Mix wet ingredients, oil, maple syrup, apple sauce, apples and rice milk.
- Pour wet ingredients into the dry ingredients and mix well, making sure there are no lumps. Stir in raisins.
- Spread mixture evenly among 24 mini muffin holes in the tray.
- Bake for 12 minutes.
- Remove from oven, let sit for a few minutes and remove and cool muffins on cooling rack or tray.
To make 8- 12 full size muffins – bake for 20-24 minutes!
Pea-Licious Banana Chocolate Chip Muffins!

At the Vegetarian Food Fair I discovered this amazing new line of products. They are all made from Pulses (or legumes)! Now I don’t think we give this plant family enough credit. They are all high in protein, high in fiber and they taste absolutely delicious. They also prove to be served in both sweet and savoury recipes. I am totally floored with the results I have gotten from using some of The Best Cooking Pulses – as they are truly the best. This includes pea fiber, green and yellow whole pea flour and chickpea flour. They are all lactose free, gluten free and made with Non GMO crops!
Now let’s just talk about pulses for for a second…(from BCP website)
Natural Pea fiber is a highly absorptive, bland-tasting, human grade, fine vegetable fiber ground from non-GM yellow pea hulls. As a functional food for human consumption, Natural Pea fiber has commercial and nutritional advantages. As an ingredient in breads, cakes, cookies, tortillas, pasta, soups and fiber drinks, it increases fiber content, mimics wheat bran but is light in colour and bland in flavour. It increases the volume of doughs and works as a fat replacer by binding water.
Pea Flour Yellow and Green split peas are pulverized to the ideal baking particle size to produce flour.This flour improves the protein quality of wheat flour in a wide range of bakery products. It is a natural processing aid providing many benefits: keeping bakery products softer longer, improving dough machinability and reducing mixing times. It is included in many snack foods.
With all of this in mind, I knew that when I attempted to make my usual gluten free banana muffin that currently just has brown rice flour, I swapped some of the flour for some yellow split pea. Nothing like a little extra yellowness to go with the banana’s. To my surprise, these muffins came out tender, moist and delicious. I was so excited – they tasted even better than my original recipe. So I have officially welcomed pea flour into my pantry and it will have a fun time getting to know some of my other whole food based ingredients!
When discovering new products it is always good to experiment with them, but don’t be afraid. Just start by substituting in small amounts for other ingredients. Even for gluten free baking, which seems so complicated, isn’t really. You just have to practice, like anything else. Pea-Licious Banana Chocolate Chip Muffins
What’s in it?
2 ripened bananas, mashed
6 tbsp grapeseed or melted coconut oil
¼ cup maple syrup
1 tsp salt
1 tbsp ground chia + ¼ cup applesauce (replaces 1 egg)
1 tsp vanilla
1 cup Whole Yellow Pea Flour
½ cup brown rice flour
1 tsp baking soda
1 tsp baking powder
½ cup dark (non dairy) chocolate chips
How it’s made!
1. Add oil, maple syrup, and salt to mashed banana and beat until well mixed. Add chia + applesauce and vanilla and mix well. Add remaining dry ingredients and nuts. Mix until just blended.
Pour into muffin tins lined with parchment paper cups. Bake for 20 minutes at 350 F!
If you can, use a stainless steel muffin tray, and parchment lined baking cups. If there are empty spaces left – add a touch of water to prevent burning!
Delicious Snacks For Everyday Enjoyment!

Okay it has arrived, the blog you have been waiting for! How to make delicious snacks, you will get some ideas here on how to be a Smart Snacker, but if you want the full experience then join me on November 1st, where you will learn how to make Delicious Snacks and get your very own copy of my new book.
The inspiration for the focus on healthy snacks is because everyone always asked me what they should snack on. I feel that people don’t really know what to eat when it comes to snacking. They either don’t think about it at all and pick up whatever they can find or think about it too much and get overwhelmed and give up. Then there are those people that follow the three meal a day rule and don’t believe in snacks at all. Well that just isn’t right, your body need to be constantly fueled by wholesome, nutritious and organic snacks – ideally made by you. If you can’t always make the time to do this then be sure to look at my approved packaged snack guide. But if you are ready and willing to take on making your own snacks, don’t fret, it is much simpler than you may think.
All you have to do is set aside some time, even an hour during the week to put together a simple delicious snack. This could be as basic as a trail mix or as intricate as apple-cinnamon muffins (which are still pretty simple) especially with my recipe! Whatever it is, if you have things on hand at home, then you are more likely to make healthy choices. When you have things that are ready to go at home, then you can also pack them up and bring them with you to work, to school or even to the movies!
At the Vegetarian Food Fair this year the focus of my cooking demo was on healthy snacking. I got up in front of a room full of people who loved snacking as much as I do! It is also that time of year were everyone is getting there lives back on track after the summer, sending kids of to school and getting back on a regular work schedule. Which means it is also time to make time for your health and this includes snacking! The last thing I want is for you to pick up fatty, sugary and salty snacks that a full of empty calories and nutrients. I want you to have the opposite. Fresh, delicious snacks that you can enjoy every single day that are packed with protein, fiber, healthy fat and nutrients!

Making some Delicious Snacks!

(Smoothie, Guacamole and Power Bites)

Liquid Nutrition Smoothie
What’s in it?
2 cups rice, coconut, almond or hemp milk
2 tbsp to 1 scoop plant based protein powder (sun warrior or vega)
½ cup blueberries or mixed berries, fresh or frozen
1 banana, fresh or frozen
½ cup chopped mango, peaches or pear
1 tsp raw honey
½-1 cup packed fresh spinach leaves
Optional Superfood Additions (1 tbsp of ) goji berries, cacao nibs, coconut oil, flax oil, chia seeds, carob powder, maca, matcha green tea powder, almond butter, acai berry powder, lacuma, mesquite etc..
Blend all ingredients in a blender until smooth and no lumps remain. Pour into 2 glasses and enjoy + sip with a glass dharma straw!
Wholly Guacomole
What’s in it?
1 cup cooked green split peas (1 cup frozen green peas, blanched)
4 green onions, 2 inch slice
3-5 tablespoons lemon or lime juice
1 teaspoon ground cumin
½ teaspoon ground coriander
1 clove fresh garlic, crushed
½ bunch parsley
¼ teaspoon sea salt
2 large ripe avocados
¾ cup chopped tomatoes
How to make it!
- Put peas, green onions, lemon juice, cumin, coriander, garlic, parsley, (jalapeno) and salt into the food processor and process until well blended and smooth.
- Cut avocados in halves, remove pits and scoop out flesh into a medium sized mixing bowl.
- Mash avocados and mix in ingredients from the food processor.
- Stir in the tomatoes, taste and adjust seasoning. Chill.
- Serve with organic corn tortilla chips, slices of jicama or whole grain crackers.
Sweet Heart Cookies or Power Bites
What’s in it?
1 1/2 cups whole raw almonds (or sunflower seeds for a nut free option)
2 tbsp hemp seeds
1 cup chopped dates
1/4 cup goji berries
2 tbsp cacao nibs or cacao powder
1 tbsp raw honey
1 tsp mesquite powder
1/2 tsp vanilla powder
1/2 tsp cinnamon
1/4 tsp sea salt
** for an extra boost – add 2 tbsp Sun Warrior Protein Powder
How to make it!
Place all the ingredients into the bowl of a food processor and pulse until you get a thick “doughy” consistency. Spread out and cut into “heart” shapes with a cookie cutter or roll and flatten into 2 inch cookies. Or feel free to roll them into little balls for quick power bites – perfect for your purse or a midday snack after a workout!

Good Things Come in Some Packages!

On the topic of healthy snacks this week (and just in time for school), it is within my knowledge to show you what is out there. Snacks that you can get your hands on that I approve of. We all need snacks, they are available, but we have a choice to make. If you have a guideline to follow of what to choose, how to choose, then you are taking one step closer to wellness and a healthy body! In a another post you will learn how to make your own snacks at home. You can also come to my Delicious Snacks class in September and get a chance to learn some recipes and walk out of the class with your very own Delicious Snacks cookbook!
As a general rule, you want to look for whole foods that are packaged. Pure ingredients made from whole grains, nuts, seeds, dried fruits and natural sweeteners. You should be able to read all of the ingredients on the label (and there shouldn’t be more than 5 unless it is jam-packed super bar) and feel confident that you are putting a good product into your body even though it is packaged!
So here is a my approved guideline for healthy packaged snacks (most of which are in my home):
Bars: Lara Bars, Vega Bars, Pro Bar, Honey Bar, Prana Bar, Organic Food Bar (there are more that aren’t listed here, but hopefully you get the idea)
Rice Cakes with Almond Butter
Sun Warrior or Vega Protein Powder with Almond Milk, Hemp Milk or Rice Milk
Salba Smart Chips and Salba Salsa
Pita Break Spelt Crackers with Hummus
Mary’s Crackers with Goat Cheddar
Sheep Yogurt with Granola
Whole Grain Bread with Almond Butter
Go Raw Cookies/Chip/Crackers/Granola
Trail Mixes made from Navitas Naturals Products

I am so happy I stumbled upon them because now every time I go to the US, I stock up (as they are unfortunately not available in Canada)! There are very few bars on the market that I stand behind and these happen to be one of them!
Prana bars have fun combinations like goji- goldenberry, acai-coconut, raspberry-pomegranate. So exciting and unique. Every bite is delicious and they are loaded with enzymes, protein and fiber. FALL in Love with Whole Foods!

Are you in love with whole foods as much as I am? I hope so. If not, then you have your chance to be. There is an opportunity coming up in the fall, I know I know, you don’t want to think that far ahead right now, but you must! As you can have the chance of a lifetime to come on an amazing RETREAT in northern Ontario. And if you don’t get on board soon, you will miss your opportunity until next year. I am giving YOU the chance to make that true connection with food from the earth. The food that nature has intended us to eat. When we eat these foods we are nourished, cleansed, rejuvenated and complete. If you don’t believe me, just try it. Start adding whole foods in to your life and just see what happens. I don’t want to be responsible for what takes place – well maybe I do, because only good things will happen!
There is so much information out there about health, nutrition etc… It can be overwhelming, exhausting and discouraging. That is why I want to make it easy for you. We will be watching some incredible and inspiring movies and you will also learn how to prepare whole foods in your own kitchen. This was the best part of my last retreat in the spring!

Refreshing Strawberry Facial Sensation!

My garden is bursting with strawberries. Which is amazing, so I have had to come up with some creative ways to use them up. Especially the ones that are a bit mushy. It’s funny, often people don’t realize that food makes the best cleansing, nourishing and replenishing tonics for the body and face. I have always known this, I just sometimes don’t practice it as often as I should. That being said, all of the products that I do buy are 100% natural and organic made with food grade essential oils and other carriers like almond oil, shea butter, coconut oil etc…
But it doesn’t get much better than making your own concoctions from scratch. There are many online resources and natural books that can guide you with recipes and ideas. But sometimes if you just think logically- the foods with the most nutrients, colour and vitamins are the best ones to put directly on your body!
So as I said, I have strawberries coming out of my ears (not to brag or anything) but I am putting them to good use. Last night I took a huge handful of them, mashed them up, added in some healing Manuka Honey and smothered it onto my face. I turned red, but I could feel the sweet red juice penetrating my skin and nourishing every cell. It felt so good! If you have every applied Manuka Honey topically, (stickiness aside) I am sure you know the feeling! After about a half hour, I rinsed it off, and my skin was smoothly, supple and nurtured. I loved it!
There is something particularly magical about strawberries when it comes to a facial mask. It is not only loaded with Vitamin C which helps to repair skin damage, a make collagen and since vitamin C is an antioxidant it also helps to protect the skin from free radicals. The alpha hydroxy acid in strawberries help to slough off dead skin cells – which instantly reveals smoother skin. I assure you, you must try this!

Scrumptious Strawberry Mask
1/2 cup fresh strawberries, mashed
1 tbsp Manuka Honey
Mix all ingredients together in a bowl and apply directly onto face. Chunks and all!
—To make this mask into an EXFOLIATION SCRUB - add 2 tbsp almond meal (left over from making almond milk) -
I kind of look like and Umpa-Loopa – but who cares, it works!

Being a vegetarian does not mean that you can’t enjoy summer parties, potlucks and BBQ’s. You just need to get a little creative and have fun with it. So this past weekend was my fiances birthday. He wanted a low key night, a dinner in with some family and close friends. Of course what this means, is that I am making dinner! Which is no problem of course, I love providing delicious goodies, especially things that everyone can enjoy! Not everyone who was coming was a vegetarian, but that didn’t matter, my mom took care of some chicken for the group, and I handled the rest!
Make sure that when you are in this situation, you find out what all your hunny’s favourites are – and go from there (hopefully you know them already!). Luckily everything that Ryan loves, are things that everyone could enjoy – and they also make great compliments to the main meal.
So we started off with some yummy appetizers, There was a home made guacamole, parsley-hummus, along with an organic store bought salsa – lots of spelt flatbread and organic corn chips for dipping. Then we had a selection of side dishes – Ryan’s favourites include (quinoa tabule, pasta salad, yam fries and “caesar” salad) and the main meal for us was Organic Sunshine Burgers (which are truly scrumptious) simple ingredients and are so easy to enjoy at a summer-Q with or without a bun!
Of course the night was topped of with Ryan’s all time favourite – a tender Chocolate Cake – made from spelt flour (all vegan and sweetened with maple syrup) crowned by an almond butter, cocoa icing – this is his number one request on a annual (or more like weekly) basis! So I paired this with coconut-mint (from my garden) cacao ice cream (the colour green in the ice cream is actually from Ormus Super Greens). No one even questioned why the ice cream was so bright green! I may even post this recipe too since it was soooo fantastic!
So there you have it, an amazing, wholesome meal that everyone can enjoy – lots of variety, flavour and texture. You want to keep your crowd happy, but most importantly you want to make your CUTIE smile on his birthday!

Vegan – Mint Cacao Coconut Ice Cream

Chocolate Cake with Mint-Cacao Ice Cream

Me and my QT (Ryan)

Mint-Cacao Coconut Ice Cream
2 cans of organic coconut milk
1/4 cup vanilla rice milk
1/4 cup maple syrup
2 tbsp fresh stevia leaves (only the fresh leaves or else leave it out!)
1/2 cup fresh mint leaves (or you can use a few drops of peppermint oil)
1-2 tbsp Ormus Super Greens (it has a minty flavour)
1/4 cup cacao nibs
Place all the ingredients except the cacao nibs in a blender and blend until smooth, creamy, and green.
If you have an ice cream maker, pour the mixture in and begin to churn, adding the cacao nibs after a few minutes.
If you don’t have an ice cream maker, freeze the mixture in a large bowl for about an hour, then remove and stir in cacao (so they don’t all sink to the bottom).
Then continue to freeze for another hour or two (depending on the consistency you like).

Delicious Retreat RaWp-up

I have always wanted to go on a retreat – especially one that was focused on health and wellness. I never really got the opportunity to pursue this interest. So instead, after finding out about the House of Verona in Collingwood Ontario – it wasn’t long before I decided to host my own retreat. There is nothing better than gathering a group of like minded individuals and guiding them through a weekend of laughter, learning, sharing and cleansing!
I put the word out in February that I was going to host a delicious retreat up in Northern Ontario and it only took about two weeks before 10 + spots had filled. I was so happy and excited that people wanted to share and escape the city for a weekend away. Because it is spring, the topic of the weekend was cleansing, nourishing, rejuvenating while eating raw, organic and vegan food. It is not very often that you get to experience all of this at once!
Planning ahead for the weekend – I created some delicious recipes and planned out all the meals. I basically took all of my favourite raw meals and created a full menu with them. We started each day with a green juice, smoothie and a yummy breakfast of sprouted bread with acai berry jam, sprouted buckwheat, almond milk and superfood toppings. Then all of our other meals varied between thai coated kelp noodles with collard wraps, savoury nut based dips with LIVE crackers, marinara and pesto pizza with caesar salad, onion-flax bread sandwich with carrot beet and kale slaw and two desserts: mango, banana “ice cream” and chocolate avocado pudding. Did I mention that this was a DELICIOUS retreat?

That was just part of it, the rest of the weekend revolved around learning and sharing. We watched the film Food Matters, had an interactive discussion about cleansing and immunity, learned how to blend smoothies, roll nori, sprout, make nut milks and what essential equipment to have in your kitchen.

The last component of the weekend allowed for healthy lifestyle activities like yoga, hot baths at a local spa and a hike up blue mountain. We managed to cover a lot in two days- but everyone got something out of it. I had participants from Ottawa, Waterloo, Oakville and Toronto - everyone had something to offer to the group, with varying areas of expertise and knowledge in health and fitness – we all learned from each other which was the best part! I am even more thrilled that long lasting friendships and bonds were created. From the positive energy and feedback I got from this group, they will always remember their Delicious Weekend Retreat. Thanks to all who joined!

How to Taste Your Dragon!

I am rather excited! As I have just eaten my first Dragon Fruit. It is so much fun to discover and taste new fruits – especially exotic ones. I can’t believe after all of these years experimenting and trying new things – I had never sliced open one of these beauties.
I’ve walked past them so many times in markets and never picked it up. But for some reason the other day something about this flamboyant fruit enticed me to reach over and grab for it.
I couldn’t help but be drawn in by it’s gorgeous pink flesh. It looks like a flower (in fact it is a flower). I know it’s not local, and most likely not organic either. But it is 100% delicious. This is not and will not be a staple in my diet, but it will be a treat (and I think I will treat myself to it more often!!).
When you cut into it you’ll notice it’s white peppered flesh. Almost like a white kiwi. It is totally unique, there is nothing like it! It is so easy to scoop the flesh out with a spoon and then slice it up and eat it up. I had to control myself from eating the whole thing. It is that tasty and so easy to eat – it literally melts in your mouth! Too bad I bought only one! I will wait at least a couple of weeks to buy another one (I said treat…right?)
Once the flesh is out, you can enjoy it in fruit salads, garden salads, in smoothies, drinks or simply on it’s own. That is just how you eat it, wait until you find out how good it is for you!
I have done my research and now I have learned that by eating Dragon (also known as Pitaya fruit), you can lower your cholesterol, balance your blood sugar, get more than your daily dose of Vitamin C, load up on antioxidants, fill up on fiber and get in your healthy fats (due to all of it’s seeds). That’s a lot of punch for one fruit! But for all that flare in it’s shape and colour, it has to offer something at least as equally interesting on the inside.
This is a loaded fruit. All of it’s beauty was worth it. I can’t wait to taste my next Dragon!

An African Opportunity!

I am excited to announce that I have a rare and amazing opportunity to travel to Africa. I have been asked by my friends Dale and Linda at Natural Calm to join them in their efforts in supporting Organics 4 Orphans.
Organics 4 Orphans is a sustainable project designed to reach out and touch the orphaned children in need. At the same time it gives an economic jump-start to family farms throughout Kenya and the whole of Africa.
My trip will commence on May 19th, 2010. The goal of my participation in this adventure is to educate these communities on healthy eating. I will be teaching them how to use their lush green agriculture in local, sustainable and simple recipes – what I do best!
I am extremely honoured to be apart of this project and can’t wait to bring my delicious knowledge to Africa. I know that in return, I will be learning from them as well. How they live, how they farm and their indigenous culture and traditions.
This will be an experience of a lifetime and I can’t wait to share it with all of you when I get back!

Wholly Guacamole!

I know very few people who don’t like avocado’s. I used to be one of them. A long long time ago – when I thought avocado’s were “fattening” and a big no no, I definitely made sure they stayed out of my diet. Then one day, by accident (after ordering my rolls without avocado) it was left in. So I figured I would give it a try – and I fell in love immediately. Over the years, I learned about how healthy they actually were and that the “fat” in avocado doesn’t actually make you fat – but makes you lean. Sounds weird right? Well not really. The healthy omega 3 oils in avocado’s are essential to our body and our cells. In this case they body actually utilizes these fatty acids for energy (as opposed to storage). Not only that, but avocados are also rich in potassium, B vitamins with have trace amounts of protein and they also help to stabilize blood sugar levels! This makes them nourishing and filling which enables you to feel satisfied when you eat them. They add a good amount of nutrients and substance to any meal – which actually causes you to eat less! Whether you make it into a dip such as guac, a spread, whirled into a smoothie or soup, sliced on a sandwich, wrap, nori or salad. Avocado’s prove to be a versatile and fun item to add to anything.
But a favourite among many is Guacamole. The creamy goodness of mashed up avocado’s is so delicious (and I have to admit somewhat addicting) and should be made and enjoyed by everybody. You can have fun with this recipe too. I love to add green peas into my guacamole, as it not only gives the dip some substance – protein, fiber and vitamins – but it also gives it a rich texture and I personally find it more satisfying. Plus you don’t feel as guilty about eating so much! Of course making regular guac with lots of jalapenos and tomatoes is also good to0 – really, anything can be added to make your guacamole recipe as wholesome and delicious as you would like.
When it comes to dipping, you can buy organic corn chips or make your own by using Food For Life’s Sprouted Organic Corn Tortillas. I cut them into triangles and pop them in the oven for about 15 minutes on 200F. Or you can just slice up veggies such as carrots, celery, jicama or spread it on whole grain/gluten free crackers.
So get familiar, comfortable and excited about Avocado’s because to me, they are one of nature’s most perfect foods!
Wholly Guacamole
What’s in it:
1 cup cooked green split peas (1 cup frozen green peas, blanched)
4 green onions, 2 inch slice
3-5 tablespoons lemon or lime juice
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon garlic granules or 1 clove fresh garlic
½ bunch parsley
¼ teaspoon sea salt
2 large ripe Haas avocados
¾ cup chopped tomatoes
Optional:
1 jalapeno chili, finely chopped or ¼ teaspoon red hot sauce
1 tsp extra virgin olive oil
How to make it:
- Put peas, green onions, lemon juice, cumin, coriander, garlic, parsley, (jalapeno) and salt into the food processor and process until well blended and smooth.
- Cut avocados in halves, remove pits and scoop out flesh into a medium sized mixing bowl.
- Mash avocados and mix in ingredients from the food processor.
- Stir in the tomatoes, taste and adjust seasoning. Chill.
- Serve with organic corn tortilla chips, slices of jicama or whole grain crackers.
Marni’s Delicious Knowledge:
Why with peas? Not only do peas give this dip substance, but they add fiber, protein and vitamins (they are also green which goes nicely with avocado!).
Avocado’s are fully of healthy essential fats, extremely satisfying and make a great base for a dip. Not only is this dip great with (non-GMO) corn chips, but it is great on sprouted bread, in a wrap or topped on a salad.

Simply Smooth

Making up a blended batch of smooth and creamy goodness is just the absolute simplest and best way to get whole food nutrition in, extremely fast!
Creating a daily smoothie is an amazing first step in taking charge of your health. It is an easy way to digest a whole slew of vitamins and minerals – along with complex carbohydrates, protein and essential fats all in one shot! Especially if you are pressed for time in the morning, a smoothie to take with you on the go is the best thing you can do for your body and your energy. Just make sure you don’t add too many ingredients or you will be left with a stomach ache and a really high calorie drink!
Smoothies are also a great way to sneak in some green veggies or powders that you may not be inclined to take with water alone – at least with a smoothie you can mask the earthy or bitter flavour (which I happen to like!). This means you can even add a bunch of spinach, collards or kale into your blueberry banana morning smoothie. Go figure! It really is that easy. That way you can at least say that you got your dose of greens in for the day!
So let me help you out and get your started with a few ideas and recipes to get some liquid nutrition running through your body.
It is important to make a smoothie that compliments what you are looking for or what your body needs – if it is a breakfast smoothie you may want just fruits, or maybe add some sheep’s yogurt, soy yogurt or coconut oil, rice milk and honey/agave or if it’s a post workout smoothie – you want a higher protein content from a plant based protein powder such as Vega, Hemp or Sun Warrior (my newly discovered RAW and VEGAN brown rice based powder that is incredibly high in protein – easy to absorb and delicious!).
Or maybe your smoothie is just for a snack in the middle of the afternoon in which case you can use some cacao or carob powder, banana, almond butter, coconut oil and cinnamon to hit that sweet craving and replenish your energy for the rest of the day!
Other than that here are some more ideas to get you started…
All you need is a good blender or if you want to take it to the next level…a Vita Mix – which is the goddess of all blenders. It is a high powered machine that will emulsify all of your ingredients into the perfect blend of whatever you put into it!
So let’s start simple.
First off – make sure you are using high quality organic fruits and vegetables. You can pick anything under the sun that makes you feel good.
Fruits: Banana, Blueberries, Raspberries, Strawberries, Mango, Pineapple, Coconut, Kiwi, Peaches, Apple, Pear, Grapes, Acai
Vegetables (sometimes it is better to juice your veggies first and use the juice as the base of a smoothie): Carrots, Celery, Kale, Collards, Beets, Spinach – if you want all green you can just use a veggie juice base and add green vegetables, an avocado and spirulina ( I call this the liquid lunch smoothie!)
Green Supplements: Kelp, Spirulina, Barley Grass, Wheat Grass, Smoothie Infusion (Vega), Vitamineral Green, or Sun Warrior’s Ormus Super Greens (ORDER NOW and Save 5% use code: MWOO7)

So here is a sample recipe to get you started….
Scrumptious Coco Shake
2 Cups almond milk
2 scoops sun warrior chocolate protein powder + 1 tsp raw cacao powder (for extra chocolate)
1 tablespoon sunflower lecithin
1 tablespoon almond butter
1 banana
1 tsp yacon necter (optional)
1 tablespoon coconut oil (optional)
1 tsp cinnamon
1 tsp mesquite, maca or carob
Place all ingredients in blend and blend on high speed for 1 minute. Pour into two glasses and drink immediately!
And this is my typical Breakfast:
Berry Blast Smoothie
1 1/2 cup rice milk, or almond milk
1/2 cup frozen blueberries or 1 packet of Acai Pulp
1/2 frozen banana
1 teaspoon raw honey
1 tablespoon sunflower lecithin (optional)
1 scoop of Sun Warrior or Vega Smoothie Infusion
1 tablespoon sprouted chia/flax or goji berries
dash of cinnamon
and if I have some fresh coconuts, I use the water and the meat for excellent flavour, electrolytes, healthy fats
Place all ingredients in blend and blend on high speed for 1-2 minutes. Pour into one or two glasses and drink immediately with a glass straw if preferred!
Who knew rolling sushi could be so simple?
